a little slice of home

this week has flown by! i'm in my second session of summer classes right now, starting to studying like crazy for the gre and spending a lot of extra time with the little one. when i haven't been busy with all that, i've been eating my new favorite thing, a tuna and avocado sandwich, and watching some terrifying lifetime movies. last night, rachel and i got all dolled up and hit the town. it was so fun but also a good reminder of why i stopped wearing heels when i moved to new york!

buttermilk pie is a staple where i come from. it is just so simple and so tasty. when i got up to new york, almost no one had heard of it. i started making it for everything and it quickly became a favorite. just a warning, it is very sweet and melts in your mouth. it also tastes wonderful with ice cream or fruit or chocolate, pretty much anything. just sayin'. 

buttermilk pie 
this is a fantastic cookbook. if my apartment was burning, this would be the cookbook i saved. seriously, it's the best.

2 c. sugar
1/4 c. flour
1 teaspoon vanilla
3 eggs, slightly beaten
1 stick melted butter
3/4 c buttermilk

preheat oven to 325〫
mix all all the ingredients and beat well. 
pour into an unbaked pie shell and bake for about 45 minutes, or until lightly browned and firm.
i usually put a pie ring on once the crust is browned, at about 30 minutes. the filling takes a lot longer to cook through than the crust.

  1. i hadn't heard of buttermilk pie either until a friend just told me about them. i have been missing out--apparently they are supposed to be amazing. maybe i will try your recipe:)
